Bulk edit columns and rows in tables

Some tables have a column that is a "primary key" with very little content, and other columns with a lot of text. The primary key column is 1 line of text, and occupies a lot of space for no content. If vertical text orientation was possible, it would keep readability while allowing dedicating most space to actual content in tables.

So I create a table, and want to build a RASCI matrix. I have to go into each cell individually and click center text. 50%+ formatting options disappear when selecting multiple cells, or a column/row/table.
Want to highlight selected fields, and change formatting in bulk. When selecting multiple, most of the formatting options go away. 
Would be really nice to select what we want to change and change it with ease. One by one is extremely frusturating.

When text is divided into separate columns on the table, it is impossible to select the text in all the columns simultaneously using Ctrl.

For example, if I have text on a page that is split into separate columns, and I want to edit only the title of each column, I cannot click Ctrl and highlight all the titles at once to change them in one click

Would be greate if we can the cells we want, not the whole column or row, and be able to format them, as well as merge them
